Iberian Cured Ham – The Authentic Taste of the Dehesa
Iberian cured ham is the crown jewel of Spanish gastronomy: it comes from the Ibérico pig, a native breed of the Iberian Peninsula capable of storing fat within its muscle fibres, giving the ham its signature juiciness and a flavour you won’t find in any other ham.
At Spanjeolé, we work directly with producers from the dehesa who raise their pigs with respect for time and tradition. We’re not chasing volume — we’re chasing authenticity: the same Iberian cured ham we’d eat back home in Seville.
Breed and curing: what makes Iberian ham unique
Not all Iberian ham is the same. The purity of the breed (50%, 75%, or 100% Ibérico) and the curing time — typically between 24 and 36 months — determine the depth of its aroma and the finesse of its marbled fat. The longer a leg hangs to cure, the more its nuances concentrate: notes of dried nuts, a glossy marbling, and a long, lingering finish.
Available formats
Our Iberian cured ham is available as a whole leg, for those who love the ritual of carving it themselves; as vacuum-packed sliced portions, ready to enjoy without losing freshness or aroma; and you can also book our live carving service for events, weddings, or corporate celebrations.
How to serve Iberian cured ham
We recommend thin slices at room temperature, allowing the fat to soften slightly and release its full aroma. Our cortador hand-carves every leg using traditional Spanish technique.
Frequently asked questions
What’s the difference between Iberian ham and Bellota ham?
“Standard” Iberian ham comes from pigs fed on grain (cebo) or pasture and grain (cebo de campo), while Bellota ham feeds exclusively on acorns during the montanera season, giving it a more intense, complex flavour.
How long does an opened leg of Iberian ham keep?
Once opened, we recommend consuming it within 2-3 months, protecting the cut with its own fat or a cloth to prevent it drying out.
Can I order Iberian ham already sliced?
Yes, alongside the whole hand-carved leg, we also offer vacuum-packed sliced portions.
